
Ingredients
(cake)
3 cups cake flour
½ cup AP flour
2 cups sugar
1 ½ tsp baking soda
½ tsp baking powder
1 cup melted butter
½ cup oil
4 eggs
1 cup milk
Zest and juice of 2 lemons
2 tbsp poppyseeds
2 cups blueberries
(frosting)
2 tbsp softened butter
2 ½ cups powdered sugar
1 tbsp vanilla
Juice of half a lemon
2 tbsp milk
Instructions
Preheat oven to 350 F.
Combine flours, sugar, baking soda, and baking powder.
Mix in butter, oil, and eggs.
Incorporate milk, zest, and juice.
Fold in poppyseeds and blueberries.
Pour batter into two lined cake tins and bake for 30 minutes.
Make a frosting using an electric mixer to combine butter, powdered sugar, vanilla, and lemon juice. Then add the milk until you reach a desired consistency.
Frost your cake when it's cool, and serve!
Tips
Don't have cake flour?
You can still use AP flour, with some alteration. Replace 2 tbsp/cup AP flour with 2 tbsp cornstarch. So, take out 6 tbsp of the AP flour and add 6 tbsp cornstarch. Then add the half cup AP flour like normal.
Bake time
After 30 minutes my cakes were perfectly done. The tops were firm, domed, and a little browned. Use a toothpick to check if the inside is cooked. If you're the type of person that constantly checks on your cakes while they're baking, the bake time will be longer. Every time you open the oven. you'll lose heat and that means your cakes will take longer. So, if you open the oven a couple times, be prepared to add a few minutes.
Calories
Baked goods are often high in sugar, fat, and carbs. As someone who bakes often, I have to watch how much I eat. I love to eat. I do. I also love to have a healthy body. That being said, I appreciate when a recipe states a calorie count. So I've decided to provide that for you.
total calories in cake: 5,926
This does not include frosting. Divide that number by how many slices you cut. I cut 12, so each slice is 493 calories. As always, eat in moderation.

This cake is just lovely. The combination of lemon, blueberries, and poppyseeds is elegant and delicious. I think I'll make this for my next birthday cake. The colors are stunning and the texture is fluffy. This is an impressive showstopper for spring. Let me know how you like it.
