1 cup milk 1 tablespoon lemon juice or vinegar 1/2 cup white sugar 2 eggs 3/4 cup canola oil 2 tablespoons vanilla extract 1 tablespoon baking powder 2 cups AP flour
Strawberries - I used about 10 medium
Preheat oven to 350 F.
Make buttermilk by combining milk and lemon juice, and leave for about five minutes.
To the buttermilk, mix in sugar, eggs, oil, and vanilla.
Now add in baking powder and flour, stir, some lumps ok.
Fold in strawberries (optional: toss them in flour beforehand to prevent sinking).
Pour batter into lined cupcake tins and bake for 20 minutes.
Baked goods are often high in sugar, fat, and carbs. As someone who bakes often, I have to watch how much I eat. I love to eat. I do. I also love to have a healthy body. That being said, I appreciate when a recipe states a calorie count. So I've decided to provide that for you.

These muffins are simple, one bowl, and delicious. I wish they had more domed tops but honestly they taste great so who cares? The muffin police care. One of my dreams as a baker is to get to that extra level when I add that chunky granulated sugar to the tops. You know, like in bakeries. I know when I start using that stuff I've officially made it in life. I'm serious.
