Pumpkin Walnut Bread

Ingredients

1 1/2 cups pureed pumpkin

1 egg

¼ cup greek yogurt

¼ cup melted butter

⅔ cup brown sugar, packed

1 tbsp vanilla

1 ½ cups flour

½ tsp baking powder

1 tsp baking soda

1 tbsp cinnamon

1 cup chopped walnuts


*optional frosting: 1 1/2 cup powdered sugar, 1 tbsp melted butter, 2 tbsp milk


Instructions

  1. Preheat oven to 350 F.

  2. Combine pumpkin, egg, yogurt, butter, sugars, and vanilla.

  3. Mix in dry ingredients.

  4. Add walnuts.

  5. Pour batter into a greased loaf tin.

  6. Bake for 55 minutes, and check the loaf to see if it is done.

  7. *optional* spread frosting on loaf after it has cooled

Calories

Baked goods are often high in sugar, fat, and carbs. As someone who bakes often, I have to watch how much I eat. I love to eat. I do. I also love to have a healthy body. That being said, I appreciate when a recipe states a calorie count. So I've decided to provide that for you.


Total calories: 1,889


That's not a very high total (yay!). I didn't include the nuts or the frosting in the total. Divide that total by how many slices your loaf made, and that will equal the calories per slice. My loaf made 10 thick slices, so each was 188 calories. Eat in moderation.

This bread is nutty, moist, and nicely spiced. I highly encourage you to make this for a fall snack or an autumn family gathering. For those who like it, a cream cheese frosting might be good too. Let me know if you like it! Happy fall!
