The perfect autumn afternoon snack

Ingredients
(cake)
1 1/2 cups flour
1 1/2 tsp baking powder
2 tbsp cinnamon
1 cup sugar
1/4 cup melted butter
1 egg
1/4 cup Greek yogurt
1/2 cup pumpkin
(streusel topping)
1/4 cup cold butter, chopped
1/4 cup brown sugar
1/4 cup flour
1 tbsp cinnamon
Instructions
Preheat oven to 350.
Combine flour, powder, cinnamon, and sugar in a large bowl.
Incorporate the wet ingredients: butter, egg, yogurt, and pumpkin.
Pour into a lined baking dish, bake for 30 min.
While the cake bakes, make a streusel by combining the butter, sugar, flour, and cinnamon.
Add streusel to top of cake after 30 min, bake for another 10-20, until no longer wobbly in center.



Coffee cake is super easy, one bowl, and delicious. It's the perfect excuse to make streusel and impress people (even though its not hard). Coffee cake is just one of those comfort foods that's perfect to have around when someone comes over to be like "Here's some coffee cake, because I have a super put together life and always have fresh baked treats". This is another cozy fall recipe I'm releasing in the hope that you'll make it and curl up with a warm drink and eat it by the fire. Or by the window while it rains. Or next to a pumpkin spice candle while you read a book. Your choice.
