Honey Lavender Cookies

Ingredients


⅔ cup butter, melted

½ cup granulated sugar + ¼ cup for rolling

½ cup brown sugar, packed

¼ cup honey

1 egg

Vanilla

2 cups flour

2 tsp baking soda

Pinch salt

1 tbsp lavender


Instructions


  1. Cream butter, sugars, honey, egg, and vanilla.

  2. Combine in 1 cup flour.

  3. Add remaining cup flour, baking soda, salt, and lavender.

  4. Refrigerate the dough for 1 hour - overnight. THIS MAKES THEM CHEWY.

  5. Preheat oven to 350 F.

  6. Break chilled dough into cookie sized chunks. Roll the chunks in your hands to make balls.

  7. Roll the balls into the ¼ cup granulated sugar, place on a cookie sheet.

  8. Bake for 10 minutes.

Tips


Do NOT over bake these

The honey will go from angelic to hellish if you over bake these. I did it. Trust me, you don't want to. 10 minutes is perfect. When I took them out, they were very delicate. When I touched one it seemed too doughy. They didn't seem baked enough, but they had the right color. Let them sit. Let them cool. They will firm up. If these cookies are brown, they are over baked. If they're golden, they're just right.


Refrigerate

DO IT. Don't skip it! It works! It makes them chewy. It makes them special. It gives them that wow factor.


Lavender

We're only using 1 tbsp. It's enough. It's not too much or too little. Your cookies will NOT taste like soap. They will be amazing. If you believe in anything, believe in my lavender measurements. When you try these cookies, you will wonder if you're a fairy. That's what we're going for.


Calories


Baked goods are often high in sugar, fat, and carbs. As someone who bakes often, I have to watch how much I eat. I love to eat. I do. I also love to have a healthy body. That being said, I appreciate when a recipe states a calorie count. So I've decided to provide that for you.


total calories: 2,915


Divide that by how many cookies you made. I think I made 24ish. So each cookie is 121 calories. If you use different ingredients, your calories will be different.


LOOK AT THAT DOUGH. Have you ever seen anything more delicious? Yes, I ate a lot of it.


Roll the balls in sugar. We did this with the chewy ginger cookies. Do it again, because it's an essential step.

They are delicious. Honey and lavender WORKS. The lavender is just enough. It's not overpowering. I would never tell you to make a recipe that tastes like soap. Trust me. These are my new favorite cookies. These are now the official cookie of Rachel's Cottage. If you make nothing else, MAKE THESE. You are missing out big time if you don't make these. You owe it to your tastebuds.
