Cinnamon Cherry Muffins

Ingredients

1 1/2 cups sugar

3/4 cup melted butter

1/2 cup Greek yogurt

2 eggs

1 1/2 cups flour

2 tbsp baking powder

2 tbsp cinnamon

1 cup jarred Morello cherries

2 tbsp rum (optional)



Instructions


  1. Preheat oven to 350.

  2. Combine sugar, melted butter, and yogurt.

  3. Mix in eggs.

  4. Add flour, baking powder, and cinnamon.

  5. Drain as much liquid as possible from the cherries by pressing them with paper towels.

  6. Fold cherries and rum into the batter.

  7. Line/grease 12 muffin tins and fill them 3/4 full.

  8. Bake muffins for 25 minutes, until golden brown.


Tips


For the cherries

I get Morello cherries from Trader Joes, but you might find them elsewhere. You could try Maraschino cherries. Fresh cherries might work too. But, make sure to press as much liquid out of them as possible (if you're using jarred cherries).


Calories


Baked goods are often high in sugar, fat, and carbs. As someone who bakes often, I have to watch how much I eat. I love to eat. I do. I also love to have a healthy body. That being said, I appreciate when a recipe states a calorie count. So I've decided to provide that for you.


Total calories: 3,236


Divide that number by how many calories you made. For example, I made 12, so each muffin was 269 calories.

These muffins are warm with cinnamon and loaded with chunks of cherries. I add rum to mine to give them a little boozy kick (the alcohol cooks off). 25 minutes did the trick with mine, but watch yours because of differing oven temperatures. Let them cool a little, and enjoy!
